Patty Pan Squash

Patty pan Squash are beautiful to look at their flower-like shape, possess a buttery taste and a tender summer squash. Try sliced pattypans steamed and drizzled with a fruity, peppery olive oil, seasoned with salt and pepper, tossed into a stir-fry or featured in a delicious soup. When sautéing any summer squash, use very high heat—due to its high water content, it will steam over lower heat.
